Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound ground beef (80/20)
  • 2 teaspoons taco seasoning
  • 1 tablespoon unsalted butter
  • 1 tablespoon all purpose flour
  • 1 cup whole milk
  • 4 ounces shredded sharp cheddar cheese
  • 40 Hot & Spicy Cheez-It® Crackers
  • 4 tablespoons sour cream
  • 2 tomatoes seeded and diced
  • 1-1/2 cups finely shredded iceberg lettuce
  • 8 (6 inch) flour tortillas

Directions

1. Heat oil in a large skillet over medium high heat. Add beef and taco seasoning, and cook until browned and no longer pink, stirring occasionally, 3-5 minutes. Remove from heat.

2. Melt butter in a small saucepan over medium heat. Add flour and whisk together for 1 minute. Whisk milk into saucepan gradually, lower heat to medium-low and continue to stir, until thick enough to coat the back of a wooden spoon.

3. Remove from heat and add shredded cheese, a little bit at a time, until fully incorporated and a smooth and creamy sauce forms. Season to taste with salt.

4. Using a 3 inch circle cutter, cut circles out of half the tortillas, discard the borders or save for another use.

5. Place a whole tortilla onto a clean surface and top with ¼ cup cooked beef, leaving a 2 inch border around the tortilla.

6. Top beef with 2 tablespoons of cheese sauce and evenly spread over the surface. Top cheese with (about 10) Hot & Spicy Cheez-It® Crackers and gently press down. Top with a tablespoon sour cream and a small amount of shredded lettuce and diced tomatoes.

7. Place a cut out tortilla round over the lettuce and tomatoes and gently press down. Repeat until all 4 burrito wraps have been assembled. Crimp the edges around the tortilla round until sealed.

8. Heat a large cast iron over medium-high heat. Allow burrito wrap to sear until golden brown on both sides, about 2 minutes per side. Repeat with remaining wraps, then transfer to a serving platter and enjoy immediately.
