Cheez-It® Hot & Spicy Chicken & Waffles
Cheez-It® Hot & Spicy Chicken and Waffles is a bold twist on a classic comfort dish, featuring crispy, spicy chicken breaded with crushed Cheez-It® Hot & Spicy crackers, served atop waffles. The dish is drizzled with sweet maple syrup to balance the heat, creating a perfect harmony of spicy, savory, and sweet flavors.
Ingredients
- 3 cups Cheez-It® Hot & Spicy Crackers, plus more for assembly
- 1 ½ pounds chicken thighs, fat trimmed and cut into 1 ½-inch pieces
- Kosher salt
- Freshly ground black pepper
- ½ cup all purpose flour
- 1 egg, whisked
- Neutral oil, such as canola or vegetable, for frying
- 1 pack frozen mini waffles, toasted
- Sliced pickle chips, for assembly, plus 3 tablespoons brine
- Fresh dill, for garnish
Directions
In the bowl of a food processor, process Cheez-It® crackers until finely ground. Transfer to a shallow bowl.
In a second shallow bowl, add flour and season with salt and pepper. In a third shallow bowl, whisk egg and pickle brine.
Working one piece of chicken at a time, dredge through flour mixture, tapping off any excess, then into egg mixture, and finely into the ground Cheez-It® crackers. Transfer to a plate.
In a large cast iron or heavy-bottomed skillet, heat 1 ½-inches oil to 350F. Carefully lower in breaded chicken bites into hot oil and cook until breading is crisped and chicken is fully cooked through, 5-6 minutes. Remove with a slotted spoon or spider and transfer to a paper towel lined plate. Season with salt.
On a plate, stack toasted mini waffles with a chicken bite, a pickle chip, a Cheez-It® Hot & Spicy Cracker, and a sprig of dill. Skewer it all together and serve immediately.
