Cheez-It® Potato Skins

Ingredients
- 6 medium russet potatoes, scrubbed
- 6 strips thick-cut bacon
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 6 ounces sharp Cheddar, grated
- 1 bunch scallions, thinly sliced
- 1 cup Cheez-It® Crackers, crushed
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 cup sour cream
Directions
Heat the oven to 400 degrees and place one rack in the middle of the oven and one rack in the upper third.. Bake potatoes directly on middle oven rack until easily pierced with a fork, about 1 hour. Transfer the potatoes to a wire rack with tongs and let cool for 10 minutes.Meanwhile, cook the bacon in a large skillet over medium low heat until crisp, then transfer to a paper towel lined plate Pour the bacon fat into a medium bowl and mix with garlic powder, onion powder, and smoked paprika. Chop cooked bacon into coarse pieces.Once potatoes have cooled slightly, slice in half vertically. Using a small spoon, gently scoop the flesh from each wedge, leaving ¼ inch or more of the flesh.Set the oven to high broil. Return the halves to a baking sheet. Brush the seasoned bacon fat on each, then top with grated cheese, bacon, and crushed Cheez-It® Crackers. Place under the broiler until the cheese is bubbling and Cheez-It® Crackers are lightly toasted. Place the skins on a serving plate. Season with salt and pepper. Spoon a dollop sour cream on each and scatter the scallions over the plate. Serve with more Cheez-It® Crackers.
