Cheez-It® Popcorn Balls
A SpOoOoOky Halloween treat made with Cheez-It®, popcorn, and candy.
Ingredients
- 3 tablespoons avocado oil
- 1/2 cup stovetop popcorn kernels
- Kosher salt, to taste
- 1/2 cup (1 stick) salted butter
- 1 (10 ounce) bag mini marshmallows
- 2 teaspoons vanilla extract
- 3 cups Cheez-It® crackers, divided
- 1 (10 ounce) bag halloween chocolate candies
- 1/2 cup halloween sprinkles
- 1/4 cup candy eyes
Directions
1. Heat oil in a large pot or Dutch oven over medium high heat. Add popcorn kernels and cover, leaving lid slightly ajar to let some air escape. Cook until kernels are popped and popping slows to less than 3 pops per 3 seconds. Remove from heat and transfer popcorn to a bowl. Season with salt.
2. In the same pot, melt butter over medium low heat. Add marshmallows and stir until melted, 3 minutes. Add vanilla and mix to combine. Remove from heat and let cool slightly.
3. In a large mixing bowl, add popcorn. Add 2 cups Cheez-It® crackers, then crush the remaining 1 cup Cheez-It® crackers in your hands, adding both the whole and crushed Cheez-It® crackers to the mixing bowl. Add chocolate candies, sprinkles, and candy eyes.
4. Once marshmallow mixture has cooled slightly, scrape into popcorn bowl, mixing everything together with a wooden spoon or rubber spatula.
5. Using greased hands, grab a heaping cup of popcorn mixture and shape into balls. Place on a parchment lined sheet pan and repeat with remaining mixture. Serve immediately.
