Cheez-It® Meatloaf Muffins

These Cheez-It® mini meatloaf bites are perfectly paired with green beans and mashed potatoes for the ultimate cozy dinner.

Ingredients

  • Nonstick spray
  • 1-1/2 cups Cheez-It® Crackers, plus more for garnish
  • 2 tablespoons olive oil
  • 1/2 medium onion, finely chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 pound ground beef
  • 1 large egg, whisked
  • 1/4 cup ketchup, plus more for brushing
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 2 teaspoon smoked paprika
  • 1 teaspoon Worcestershire sauce
  • Fresh chives, for garnish

Directions

1. Coat a muffin tin with nonstick spray and preheat oven to 400F.

2. Add Cheez-It® crackers to a zip top bag and seal. Crush with a rolling pin or wine bottle.

3. Heat oil in a large skillet over medium heat. Add onion and cook until soft and translucent, 5 minutes. Season with salt and pepper.

4. In a large bowl, mix beef, cooked onion, ground Cheez-It® crackers, egg, ketchup, garlic powder, oregano, paprika, and Worcestershire sauce. Season with 1 teaspoon kosher salt and freshly ground black pepper.

5. Divide beef mixture between prepared muffin tins. Bake until slightly cooked through, 20 minutes. Remove and brush each meatloaf muffin with ketchup, then top with a Cheez-It® cracker. Return to oven and bake until fully cooked through, another 10 minutes.

6. Let cool slightly, then remove from muffin tins and serve with mashed potatoes and fresh chives.
