Cheez-It® Lemon Bars

If you could taste the Cheez-It® Citrus Bowl, this is what it would taste like.



  • 3 cups Cheez-It® Crackers
  • 1 ¾ cups all-purpose flour, divided
  • ⅔  cups powdered sugar, plus more for dusting
  • 1 ½ teaspoons salt, divided
  • 12 tablespoons unsalted butter, melted
  • 3 lemons, zested
  • 3 cups granulated sugar
  • 8 large eggs
  • 1 cup freshly squeezed lemon juice (about 8-10 lemons)


1. Heat oven to 350F and line a 9x13 baking dish with parchment paper.

2. In the bowl of a food processor, pulse Cheez-It® Crackers until they are a finely ground. Measure 1 ½ cups of ground Cheez-It® Crackers. Reserve remaining ground Cheez-It® Crackers for garnish.

3. Whisk together 1 ¼ cups flour with the powdered sugar and 1 teaspoon salt, then pour in the melted butter and mix until combined.

4. Transfer the dough into your lined pan and press down into a flat layer, pressing down with your hands. Bake at 350F until lightly golden, 20 minutes.

5. While the crust is baking, mix the granulated sugar and lemon zest in a large bowl, using your fingers to break up clumps of zest. Add the remaining ½ cup of flour and mix well.

6. Pour in the lemon juice and add the eggs then whisk very well until completely combined.

7. Pour the filling onto the warm crust then transfer to oven and bake for about 25 minutes, turning halfway through the bake. Remove from oven and allow to cool for an hour before chilling in the refrigerator for two hours.

8. Dust with powdered sugar and reserved ground Cheez-It® Crackers. Cut into 24 bars.
