Cheez-It® Cracker Cobb Salad

Who said salads had to be polite? 💁‍♀️ The Cheez-It® Cobb is loud, proud, and extra in all the right ways. Cheez-It® crusted chicken tenders? Iconic. Cheez-It® cracker croutons? Main character energy. Toss in the usual Cobb crew: bacon, egg, avo,and you’ve got a crunchy, bougie, snackified slay.

Ingredients

  • 3 medium shallots
  • 3/4 cup red wine vinegar, divided
  • 1/2 tablespoon sugar
  • 1/2 tablespoon kosher salt, plus more to taste
  • 1 teaspoon Dijon mustard
  • 1/2 cup extra virgin olive oil
  • 1/2 cup all purpose flour
  • Freshly ground black pepper, to taste
  • Neutral oil, for frying
  • 2 large eggs, whisked
  • 4 cups Cheez-It® crackers, divided
  • 1 pound chicken breast, pounded to 1/4-inch thickness
  • 1 head romaine, chopped
  • 4 large eggs, hard boiled and coarsely chopped
  • 8 strips bacon, cooked and coarsely chopped
  • 1 ripe avocado, thinly sliced
  • 4 ounces blue cheese, crumbled
  • 1 bunch chives, thinly sliced

Directions

1. Thinly slice 2 shallots and mince the third. In a medium bowl, mix sliced shallots with ½ cup red wine vinegar, sugar, and ½ tablespoon salt. Let sit, refrigerated, at least 15 minutes or up to 2 days.

2. In a medium bowl, mix remaining minced shallot with mustard, remaining ¼ cup red wine vinegar, and olive oil. Season with salt and pepper to taste.

3. In a shallow bowl, add flour. In a second shallow bowl, add eggs. Crush 2 cups Cheez-It® crackers in a zip top bag and add to a third shallow bowl. Season all three bowls with salt and pepper. Season chicken on all sides with salt.

4. Dredge chicken in flour, tapping off any excess, then dredge through egg wash, and finally coat in Cheez-It® cracker crumbs.

5. Heat ½ inch oil in a large skillet over medium high heat. Add breaded cutlets, 2 at a time, and cook until breading is golden brown and chicken is cooked through, about 3-4 minutes per side. Transfer to a paper towel lined sheet pan and repeat with remaining cutlets.

6. In large bowl, add romaine lettuce, hard boiled eggs, bacon, avocado, blue cheese, remaining 2 cups Cheez-It® crackers, pickled shallots, and chives.
