Cheez-It® Biscu-it
Bring the Cheez-In Diner home! Our Cheez-It® Biscu-It has flakey layers filled with Original Cheez-It® crackers is perfect with honey butter, hot honey, or a chicken tender wedged in between!
Ingredients
- 2 cups all purpose flour, plus more for dusting
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon kosher salt
- 6 tablespoons unsalted butter, diced and chilled, plus 4 tablespoons, melted for brushing
- 1 cup buttermilk or whole milk
- 1 cup Cheez-It® crackers, plus more, crushed, for garnish
- ½ cup (4 ounces) shredded cheddar cheese
Directions
1. Preheat oven to 425F and line a baking sheet with parchment paper.
2. In a large bowl, sift together the flour, baking soda, baking powder and salt. Whisk to combine.
3. Using a pastry cutter or your hands, gently cut the butter into the flour, until there are pea-sized pieces or smaller of butter and flour.
4. Using a wooden spoon or rubber spatula, stir in the buttermilk, cheddar cheese and whole Cheez-It® crackers just until combined, do not overmix.
5. Flour a clean work surface and turn the dough out onto the surface. Use a floured rolling pin to roll out to 1” thickness, again, avoid overworking. Shape into a rectangle about 4 inches by 6 inches and use a bench scraper to form six 2-inch by 2-inch biscuits.
6. Transfer the biscuits to prepared sheet pan and chill in the fridge for at least 10 minutes.
7. Brush the top of each biscuit generously with melted butter and then sprinkle lightly crushed Cheez-It® crackers on top.
8. Bake in preheated oven, until browned and cooked through, about 16-18 minutes. Rotate the pan halfway through the cook.
9. Remove from the oven and allow to cool slightly. Serve immediately.
