Cheezy Pizza Pocket

Finish the night off with the Cheez-It® shaped pizza pocket of your dreams, baked with Cheez-It® Original crackers and Cheez-It® Extra Cheesy seasoning, stuffed with mozzarella and marinara. Recipe Credit – Chef Zac Cardona – Studio Cheez

Ingredients

  • 4 cups All purpose flour
  • 1 teaspoon Salt
  • 1/2 cup Unsalted butter, melted
  • 4 Egg yolks
  • 1 cup Water
  • 8 oz. Marinara
  • 16 oz. Mozzarella
  • 1 cup Cheez-It® Original crackers, crushed
  • 1 Tbps Cheez-It® Extra Cheesy seasoning
  • 2 Whole Egg *Egg Wash*
  • 1/2 cup Water *Egg Wash*

Directions

1. In a large mixing bowl, combine flour, salt, water, egg yolks, Cheez-It® Extra Cheesy seasoning and melted butter with your hands until it forms a ball. Add flour a tablespoon at a time if the dough is too wet. Knead for 5-10 minutes until dough forms a smooth ball. Place in a mixing bowl and cover with plastic wrap. Place in the fridge to let it rest for at least 30 minutes.

2. Once rested, remove dough from bowl and place on cutting board. Cut the dough into roughly 3” x 5” rounds, about a ¼ inch thick.

3. Once all cut, use a rolling pin to square the rounded edges.

4. Place 2 oz of mozzarella down on one sheet of dough, followed by 1½ tablespoons of marinara.

5. Do this on a total of 8 sheets of dough, reserving the remaining 8.

6. Once 8 sheets have been topped with the mozzarella and marinara, place a second sheet on top and gently press the edges together with your fingers.

7. Using a knife or pizza roller, trim any excess off the press edges, reserving a ¼ inch rim.

8. Using a fork, press down the sealed edges. Using a toothpick, poke a hole in the center of the top sheet.

9. Gently place the pockets on a greased baking sheet.

10. Combine the whole eggs and half cup water and whisk thoroughly. Brush the top of each pocket with the mixture and then sprinkle the crumbled Cheez-It® Original crackers over top of each pocket.

11. Bake in the oven at 350º for 15 minutes or until golden brown.

12. Remove from the oven and let stand for 10 minutes before enjoying.
