Cheez-it® Crab Cakes

Cheez-It® crab cakes? Literal coastal slay. Crispy, cheesy, and giving “main character energy” at the appetizer table—why settle for basic when you can get boujee?

Ingredients

  • 2 large eggs
  • 1/4 cup chopped celery
  • 1 1/2 cups crushed Extra Toasty Cheez-It crackers, divided
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon-style mustard
  • 1/4 teaspoon red hot pepper flakes
  • 2 tablespoons thinly sliced chives, plus more for serving
  • 1 teaspoon salt
  • to taste Freshly ground black pepper
  • 1 pound lump crab meat, flaked
  • Neutral oil, for frying
  • 1/2 cup mayonnaise
  • 1 lemon, zested and juiced
  • 1 large garlic clove, grated
  • to taste Kosher salt and black pepper

Directions

1. Make the aioli. In a small bowl, combine all ingredients and season to taste.

2. In a large mixing bowl combine the eggs, celery, 1 cup crushed Cheez-It® crackers, mayonnaise, mustard, pepper flakes, chives, salt and pepper, and blend well. Add the crab meat, and mix to combine.

3. Divide the mixture into 12 equal portions and shape into 1-inch thick discs. Dredge them lightly in the remaining 1/2 cup crushed Cheez-It® crackers.

4. Heat approximately 2 tablespoons of the oil in a skillet (preferable cast iron) over medium heat. Saute the crab cakes until golden brown on both sides, about 3-4 minutes per side, using more oil if necessary. If cakes are burning, turn down the heat. Drain on paper towels immediately. Serve immediately with aioli, chives, and more Cheez-It® crackers.
